The Yummiest Tomato Tart

With a glut of cherry tomatoes to enjoy, and a jar of the now famous "Breathe Kitchen Rainbow Relish", I felt inspired to put these two elements together to see how they wanted to play.
Turned out to be a glorious result!




Here's what you'll need:

A pack of puff pastry
A jar of your favourite chutney. 
Mozzarella cheese. (Or any other cheese you have knocking about!)
Plenty of cherry tomatoes. (Equally, use whatever tomatoes you can lay your hands on. Slice in half though.)
Some chopped parsley, or basil to sprinkle. 

So.

Pre-heat the oven to 180c

Roll out the pastry to fit the plate/baking tray you want to use.
I twist the edges over all the way around to make a bit of a side. Don't trim it off - it would be a shame to waste good pastry.


Spread the chutney over the base.
Put the cheese layer in place.
Then arrange the little red beauties on top, loading up with as many as you can fit in!


Bake in the oven for about 25 minutes

Sprinkle with fresh herbs- take a moment to enjoy the impact of the colours. It's quite stunning.

Serve with a huge salad with a good dousing of balsamic dressing.
